Se trata de <strong><em>Xic Vermell<\/em><\/strong>, un vino diferente y con personalidad propia, pero con un claro arraigo al territorio natural que define el origen de los vinos y cavas de Torell\u00f3 Mata, el Pened\u00e8s.<\/p>\n<p>Durante los \u00faltimos 5 a\u00f1os, en Agust\u00ed Torell\u00f3 Mata han estado trabajando con esta variedad aut\u00f3ctona, la Xarel\u00b7lo Vermell, cuyo grano se caracteriza por ser redondo y gordo, de piel gruesa y de un color rosado muy particular.<\/p>\n<p><!--more--><\/p>\n<p>La sequ\u00eda extrema del \u00faltimo a\u00f1o ha dado como resultado una uva de acidez elevada y una mayor concentraci\u00f3n de az\u00facares. La maceraci\u00f3n de la uva en prensa durante horas le ha aportado complejidad, estructura, color y aroma, y la fermentaci\u00f3n en dep\u00f3sito a temperatura controlada durante 3 semanas, junto a las propias l\u00edas, ha acabado de hacer el resto.<\/p>\n<p>El resultado final son 6.400 botellas de un vino diferente. Un vino p\u00e1lido trabajado como un vino de crianza. De color salm\u00f3n transparente y con reflejos naranjas y rosados, es un vino de aromas intensos que recuerdan a fresas con nata y bayas rojas. En boca es elegante y goloso, con matices que recuerdan a hinojo y flores blancas.<\/p>\n<p>Est\u00e9ticamente, la imagen del <em>xic <\/em>(chico en catal\u00e1n) se presenta en esta ocasi\u00f3n tumbado, casi como si estuviera descansando, pero con la alegr\u00eda y la vitalidad del vino joven y fresco que representa.<\/p>\n<p>A la hora de sentarse a la mesa, <em>Xic Vermell<\/em> es ideal para acompa\u00f1ar pescados blancos al horno, setas, verduras, pescados azules y carnes blancas.
